I’ve also seen these called Puff pancakes, Oven pancakes and Dutch Babies. Bake these in muffin pans and they will be popovers. Whatever you call them, they are super yummy, nutritious and cheap! Your kids will eat these up like candy, and you can feel good about serving them.
- 12 eggs
- 2 cup milk
- 2 cup flour
- dash salt
- 1 T vanilla
- 1 tsp nutmeg
- 1 cube butter

Place a cube of butter in a 9 x 13 glass pan, in the oven, while it preheats oven to 425 degrees F, melting the butter.

Place the eggs, milk, flour, salt and vanilla in a blender; cover and process until smooth. Pour batter into hot, buttered baking dish.

Bake, for 22-25 minutes or until edges are golden brown and puffy.

It is delicious just plain, or pick one of the variations below to make it fancier.
Variations:
drizzle the top with raw honey and butter
top with fruit compote or maple syrup
spritz with lemon juice and sprinkle liberally with powdered sugar
