Burritos are both cheap and healthy, and they freeze well, so you can make a bunch all at once and use them throughout the week. Make them dozens of different ways for variety, and make them often to stretch your grocery budget further than you ever thought possible!
1. Mix a can of refried beans with 1/2 c. salsa to thin them a bit. Add 1 t. garlic powder, 1 t. chili powder, 1/2 t. cumin and salt to taste. Heat the bean mixture in a saucepan or microwave.
2. Warm a stack of tortillas for 15 seconds in the microwave.
3. Spread a scoop of the bean mixture down the center of each tortilla and wrap them up.
Variations:
Use a can of black beans in place of the refried beans. Sautee in saucepan with 1 T. coconut oil and a small onion, diced.
Add a can of corn or a can of diced tomatoes or both.
Add olives, peppers, or any vegetable.
Add 1/2 c. cheddar cheese
Top with chopped lettuce, cilantro, diced tomatoes, salsa and sour cream after heating.
