I like to mix this together and leave it sitting in the oven overnight, using the auto-bake feature to start it cooking in the morning so that we wake up to yummy, spicy, freshly baked smells. It helps us get moving in the morning.
Ingredients:
- 4 c. rolled oats
- 2/3 c. brown sugar
- 2 t. cinnamon
- 1 t. salt
- 1/2 c. craisins
- 1 t. baking powder
- 3 c. whole milk
- 1 c. applesauce
- 3 T. melted butter
- 3 large eggs
- 1 T. vanilla
Instructions:
2. Beat the butter and sugar together, add eggs, applesauce, milk and vanilla, and beat thoroughly. In a separate bowl, mix oats, cinnamon, salt and baking powder. Add the dry ingredients to the wed ingredients and stir until combined.
3. Pour batter into a greased 9 x 13 pan and bake at 350 degrees, for about 30 minutes, OR, make the batter the evening before, place in the oven overnight, and set your oven’s auto-bake to bake the oatmeal around the time you want to get up in the morning.
You can vary this recipe by adding different fruits. You can also bake this in individual muffin tins to take with you.
